I see no reason why you shouldn't be at least in the hi 10's with that set up. Depending on car weight and proper engine and chassis tuning that combo would easily run some hi 9's or low 10's. Also in my opinion you may wanna go with a larger carb as well.

Here are my thoughts, First, I think your goals are easliy within reach, Second, I also think you might need to go bigger on the carb.
The only other thing I question is the stall speed, but I'm not someone you should asked about that, I let the pro's make that call.
Those who think they know it all have no way of finding out they don't.........

I would think you need a 950 holley. (about 850 real world cfm). And a tad higher stall. And it wil see some solid 10's if its not a total tank, and has some good suspension.
73 Vette, moly back half
Pump gas 496
Two Pro Systems 950's
Chance 6000 converter

I would try to get some aluminum heads for the weight loss ( not that you really need them) its about 70lbs off the nose, also bump up the compression a bit if you get the alum heads. X3 on the carb/converter. I had good results with Hooker Comp 2" headers on my 454 FWIW
