I just scored a good deal on an infrared thermometer on eBay. I plan on using this to better log/analize tire temps immediately after burnouts as well as using it to help balance the carb by analyzing header tube temps. Any other cool things to use this for???

works pretty well checking the temp of beer in the fridge. pretty much anyhting you wanbt to check the temp of you can use it on, only thing is if there is alot of radiat heat around what you are tring to monitor you might get some scewed readings.

The infrared thermometers have one drawback that needs to be taken into consideration. The "emmissivity" of the target will affect the accuracy of the readings. This basically relates to the color of the target. Most thermometers are set for "Black Body" targets, so it will read well on the tires. If your headers are silver coated, the readings will be substantially below the actual temperature.

tru, but they will show you a differeance in temp between cylinders if there is one.

Beyond,

The probes you found should work with a data logger, and if you get the one with 10mV/DegC it won't need a thermocouple amplifier.
