I am posting this for Marty, but if anyone else wants to give me their thoughts then thats cool too.

This is in my Dads 1979 Capri. I think it is tight because it seems lazy of the line.

I was thinking more like 4000 - 4200....
Not near aggressive off the line to be 5000+ imo ..

Around 5000 is where the tach goes on the hit until it starts to climb.
It looks to me that you stalled it to about 2200-2300 rpm's. I bet if you were to raise the launch rpm up to about 3600-3800 you would find a difference in aggressiveness.

It flashes about 5000 . shifts at 7000 and drops to about 6000 which is about right, could be a little less with the 3 speed. Note you only gain about 100 rpm from 3rd gear shift to finish line!!! You could raise the stall and that would help but you would gain more by changing the rear end gear ratio , as more gear reduction on a nat. asp. car is like free horse power and judging by the finish line coming only 100 rpm after high gear shift you should be able to make a pretty big jump in gear ratio
