nitrous? for beyond
or anyone that will chime in would a 250 gph electric fuel pump with 8an fuel line be enough to keep up with the needs of a high 11 sec car on the motor and a 200-250 shot plate system?

Maybe, get you a holley blue pump or equivelent for the nitrous side or get at least a Magnaflo 375 or equivelent if you want to run one pump.
The 250 would probably work but in my opinion I believe you will be dealing with unstable delivery pressures to the nitrous side sooner or later. That's not good.

I'd agree with Moose, a single 250 rear mount "might" get it done but you're starting to get into an area that it might not also. The harder the car launches the more pump you're gonna need with a single. A front mounted nitrous fuel cell and a second pump would be almost bullet proof. When you try and run everything off one pump from the rear things get a bit more complicated so it's better to have plenty of pump.

Good to have you here Justin - Having a second tank and pump will serve you well. Don't get me wrong you can do it with one big pump but if you do I'd sugguest a full bypass system and monitoring equipment so that you can make sure everything is working right, they are a lot more picky to work with.
